An assistant will take you to a picturesque corner of the historical centre through a pleasant walk. You will live a different and involving experience combining food, art and culture. In an equipped kitchen of a characteristic Florentine home, guided by a skilled Chef you will be taught how to prepare a full typical Tuscan menu and to match wines in about 2 and 1/2 hours. Meet chef Giovanni and learn how cook a nice Tuscan meal in the heart of Florence. Classes are offered as a view into a typical Tuscan cuisine. CHEESE MAKING AT THE CRETE SENESI

Mrs Silvia will show you all the secrets for making delicious pecorino cheese using milk coming solely from the farm’s flock of Sardinian Sheep. It is made traditionally, wholly by hand (in this case, your hands!). Then you will also learn how to produce ricotta, a creamy fresh, slightly and sweet cheese. At the end of the class a 4 courses lunch will be served: you will try tasty pecorino and ricotta cheeses, ham, pig cheek, fennel flavoured salami, Tuscan salami, fresh sausage, Cinta Senese lard….Wine tasting of 2 red wines: Chianti Classico Castello di Uzzano 2005 and Orcia rosso DOC "Tenuta Belsedere" annata 2006. SLOW FOOD ASSOCIATION TOUR

“Chi mangia e beve sano arriva lontano” (who eats and drinks healthily lives longer)
Tour guided by the Slow Food Association for food and wine lovers to discover the typical products of the area. A whole day dedicated to food and wine connoisseurship wandering around the Val di Chiana and the Val d’Orcia: a tasting in a cheese factory and a tasting of typical cured meats from the area. A hand made “pici” tasting and a visit to a wine cellar with a tasting of Vino Nobile di Montepulciano. Transportation not included.

CACIO PECORINO CHEESE FACTORY VISIT

Guided visit – with transport in a minibus - to a cheese factory where the famous “cacio pecorino” is made. Tasting of three types of cheese made by an expert, in the traditional production manner; accompanied by a video showing the phases of manufacturing. The tour concludes in a wine cellar in Montepulciano’s historical centre, where it will be possible to taste Vino Nobile as well see the ideal combinations of the vine products of Montepulciano and “cacio”.

OIL TOUR

Guided tour in an olive press in the area, to see the various phases of the pressing (washing, crushing, separation, extraction), and the way this precious condiment, that is the base of Mediterranean food, is produced.  The Olive Press operates from mid October to mid January. Enjoy a guided tour in a winery, which produces both wine and oil; a panoramic walk in the olive grove and a wine and oil tasting. In the winter time there is no walk in the olive grove.

TRACKING DOWN TRUFFLES

January/April: truffle marzuolo or bianchetto in a private pine wood; June/September: the black truffle, called “scorzone”, in a private black-pine or oak wood; October /December: the “king of truffles”, the prestigious white truffle in a private wood of white poplars and oaks. The real protagonist is the dog with its amazing sense of smell. At the end a gift from the guide.

COOKING WITH RODOLFO - VIA

The chef Rodolfo will reveal the secrets of typical Tuscan cuisine – everything from how to make fresh homemade pasta to the use of aromatic herbs and spices, from baking bread to preparing main courses using seasonal meats and vegetables. He will share with you the secrets of preparing not only fresh ‘tagliatelle’ but also several typical Tuscan dishes including:
‘pappardelle alla lepre’ (pasta with hare sauce)
pork coated with ‘briseč’ paste roasted in our wood burning oven;
chicken&rabbit ‘alla cacciatora’ (with bay leaves and green olives);
guinea-fowl with ‘aceto balsamico’;
wild-boar ‘in salmi’ with red Sangiovese wine,
and traditional desserts like ‘panna cotta’.
Classes are small, informal, and geared toward hands-on learning. Relaxed setting appeals to both beginners and advanced students.
