The small village of Minori, the pearl of the Amalfi Coast, boasts a history rich in culinary traditions. The beginning of local cuisine were undoubtedly of Roman origin, dating to I C. A.D. Resident Roman patricians considered this area to be an earthly paradise. In the course of the centuries the undiscussed protagonist amongst the typical local products has been home – made pasta. The small town of Minori thanks to the presence of watermills and its vicinity to marine communication routes became famous for its pasta making factories. Most buildings were in fact used as “pasta” factories and were subsequently converted into houses for local people. There are nowadays many local events, which involve traditional cuisine. The director of the Hotel Villa Romana is personally involved in one of these events and he is a connoisseur of the enogastronomy on the Amalfi Coast. To this end seminars and meetings about the area’s food and wine with the participation of international chefs are organized by Mr. Andrea Reale, the manager of Hotel Villa Romana in Minori.
The lesson can take place in the morning or in the afternoon
During the welcome meeting you will receive a book in typical Amalfi paper with the description of the recipes. Starts a 3 hours cooking course, followed by lunch or dinner. After the lesson you will receive a little ceramic gift and a certificate of participation to the course.

Mamma Anna
One day group cooking class
Every Italian has in his chromosomes the taste and scents of the food his "mamma" used to cook for him and he will never forget. This itinerary will not teach you the great restaurants chefs' recipes, so complicate to repeat and far from the traditional simple Italian cookery, but you will prepare and taste dishes "locally preferred," the ones that locals want to keep all to themselves. Mamma Anna with her family will welcome you in the shade of a beautiful garden, under lemon groves and bougainvillaea and, once and for all, will share these secrets with you. Learn how to prepare the local liqueur limoncello, the typical eggplant parmigiana, home made pasta and more.

Wine, Lemon and the Hand-made Paper

Meeting in Hotel with the guide and departure by private car to Furore. Visite to the Marisa Cuomo Wine Cellar. Short panoramique tour of the town of Furore, town member of the Painted Towns of Italy Association, and stop at the famous Fyord and departure for Amalfi. Guided visit of the historical centre and the Duomo. Sightseeing walk along the old streets and alleyways up to the Hand Made Paper Museum, to assist to the traditional paper making. Continuation on foot to the Valley of the Mills and stop at the CATA lemon factory, visit to a lemon grove and to the Farmers Museum, limoncello tasting. Lunch in a local restaurant. After lunch departure for Ravello, visit of the Villa Rufolo and Cimbrone. Return to Hotel in the evening.

Ceramic of Vietri and the Colatura delle Acciughe

Meeting in hotel with the guide and departure by private car to Cetara, characteristic fisherman’s village. Visit of the historical centre and the port, after on foot transfer to the Delfino Factory where you can assist to the transformation and preservation of the local fish, such as the “colatura delle acciughe and the alici”. Tipical fisherman’s lunch. In the afternoon departure for Vietri, visit to the Pinto Factory to see the old basements once upon a time factories and then possibility to take part of some phases of the ceramic making. Free time for shopping and return to the hotel in the late afternoon.

The Romans, Hand Made Pasta and Wagner

Meeting in the hotel with your guide and departure by private car for Minori. Visit to the excavations of the Roman Villa of the 1st century A.C., with the Antiquarium. Meeting with the “Pastaio” and visit of the small factory with possibility to assist to the pasta making (ancient tradition of Minori). Lunch in typical restaurant of the town. Free time to look around and sweet stop to De Riso cake shop to taste a local
traditional cake. In the Afternoon departure for Ravello and visit to the Villa Rufolo and Villa Cimbrone.

Buffalo Milk Mozzarella and Grandmother's Delicatessen

Meeting with your guide and transfer to the Vannulo Estate (Biological farm of buffalos and milk products). Meeting with the supervisor and visit of the Estate and of the small Museum. You can assist to the making of the daily products (mozzarella, yogurt, ice creams) then lunch will follow. Afternoon visit to the Maida Farmhouse. Visit of the Farm and a full immersion course on vegetable transformation and preservation. Return to the Hotel in the evening.

Meeting with your guide and transfer to the Wine Cellars De Conciliis, wine tasting of the DOC wines and visit of the cellar. Continuation to Vatolla site of the Literature Park “Gian Battista Vico”, lunch in local restaurant. In the afternoon departure for Serre and visit to the Oil Factory Di Giacomo where you can assist to the oil making. Return to the Hotel in the evening.

Enogastronomy in Irpinia: Feudi di San Gregorio Wine Cellars and the Torrone Factory

Meeting wiith your guide at the hotel and departure for the inland area of Irpinia, full day excurison dedicated to one of the most important wine producers of the Campania Region: Feudi di San Gregorio. Guided visit to the wine cellars and wineyards, wine tasting of the top wines or the 3 selected wines of the month. Stop for lunch at the Marenna slow food restaurant of the property. In the afternoon visit to a torrone factory, to assist to the production of the famous treat made of local honey and almonds. Return to hotel late afternoon.
